Dairy free ice cream recipe, with a rich buttery flavor, but low in fat and carbs. This single serve recipe is a THM – FP by itself. You can make it an E or S depending on what you top it with.

One of the things I really missed after going dairy free was ice cream. Trim Healthy has a recipe for Tummy Tucking Ice Cream, which is in their Trim Healthy Mama cookbook, page 363. That recipe has dairy in it, so I tweaked it some and decided to get creative with flavor in my basic vanilla recipe.

This recipe is dairy free. It has a rich, buttery flavor, using butter flavoring, caramel flavoring, and vanilla. I think it makes a great base ice cream flavor, almost like a butter pecan or French vanilla.

For the sweetener, THM Gentle Sweet or a 1:1 sugar substitute would work. I personally use Bochasweet in my recipes. You can use either granulated or powdered sweetener in this recipe.

The recipe is super simple. Blend it up (I actually use a milk frother and a mason jar), add the xanthan gum, and make sure that’s fully mixed. If the xanthan gum clumps, it will make lumps in your ice cream, so just blend it well. It gives it a smoother consistency in the finished ice cream than if you don’t use it.

Pour into a single serve ice cream maker and let it churn until it’s a nice soft serve consistency.

You can use any single serve ice cream maker that holds 8 oz of liquid. I use a DASH My Pint ice cream maker that I bought off Amazon. You store the mixing bowl in the freezer until you’re ready to use it, then pour your ice cream solution in, add the lid and paddle, switch it on, and go. It takes maybe 20 minutes to churn because the bowl is frozen and the ice cream freezes quickly.

Right out of the ice cream maker – doesn’t it look delicious? This has a soft-serve consistency.

I often eat this vanilla ice cream plain if I want a really light FP dessert, but I also love to top it with a coconut oil-based chocolate sauce to give it that ‘Magic Shell’ kind of effect if I’m wanting an S dessert.

Ingredients

1 cup unsweetened almond milk
1 Tbsp gentle sweet or 1:1 sugar substitute (I use Bochasweet)
1/2 tsp butter flavoring
1/4 tsp caramel extract
Dash vanilla
Dash salt
1/4 tsp xanthan gum

Instructions

  1. Mix all ingredients except xanthan gum in a blender until well mixed.
  2. Add xanthan gum and blend well.  Mixture will be frothy and will thicken some.
  3. Pour mixture into a single serve ice cream maker.
  4. Churn until desired consistency.
  5. Enjoy.

Notes

This recipe works best made in a single serve ice cream maker.  I use a Mini Dash pint size maker.
