We’ve got family coming in this week, so things will be interesting around here. I haven’t told S that his Grammy and Poppy are coming, but I think he suspects something is up. It’s not just my parents though – my brother and his wife are coming with them. It should be pretty interesting with that many people in this house! They don’t eat the same way we do (less South Beach friendly), so I’ll be picking and choosing what I personally eat (like skipping the spaghetti on Thursday, so I can eat a breadstick and a salad instead).
7 Sunday – tossed salads with chicken breast
8 Monday – chicken and artichoke casserole, brown rice
9 Tuesday – beans and franks (meal from last week we didn’t eat)
10 Wednesday – vegetable soup
11 Thursday – spaghetti, breadsticks, salad
12 Friday – homemade pizza (I’m thinking of trying a low-carb pizza recipe I found – the rest of the family will eat the regular pizza)
13 Saturday – turkey and rice casserole
Breakfast will be eggs, grits, oatmeal, or SB-friendly muffins (using flax seed and Splenda instead of flour and sugar). I liked the SB muffins to begin with, but then I read that flax seed is good for pcos too. I’ll take that!
Lunches are mostly tossed salads, tuna salad, or leftovers. S gets sandwiches too, though Stephen and I don’t eat them as often.
Snacks are fresh veggies, cheese sticks, etc.
