Sunday – bean burritos with multigrain tortillas
Monday – dinner at in-laws – grilled chicken, green beans, tossed salad
Tuesday – chili (might try it in the crockpot this time, but not too sure on that one yet)
Wednesday – tomato soup with multigrain rolls
Thursday – chicken alfredo and brown rice
Friday – beans and hot dogs (aka beanie weenies, lol)
Saturday – homemade chicken nuggets with sweet potato oven fries
Breakfast will be eggs, grits, oatmeal, or SB-friendly muffins (using flax seed instead of flour).
Lunches are mostly tossed salads, tuna salad, or leftovers. S gets sandwiches too, though Stephen and I don’t eat them as often.
Snacks are fresh veggies, cheese sticks, etc.
It’s not the most gourmet week, but it’s food we like, healthy for the most part, and filling. It works for us.
