New pancake recipe

A couple weeks ago Susan posted a link to Grain and Nut Whole Wheat Pancakes. She said that the recipe was a keeper. Well, I’ve tried several recipes for wheat pancakes, and the only one I’ve really liked Stephen doesn’t.

We tried the recipe yesterday. I didn’t put nuts in them because we didn’t have them, but they were fantastic without them! Wow. I’ve finally found a recipe that our whole family likes. What also makes me happy is that the recipe doesn’t use any white flour, yet it’s still light and fluffy. Definitely a winner in my book!

Grain and Nut Whole Wheat Pancakes

  1. I forgot to add that I didn’t use any white flour, I did the whole recipe with a wheat flour buttermilk pancake mix…

    Cranberry Orange Oat Pancakes…
    1 cup old-fashioned rolled oats
    1 cup whole wheat flour
    1/4 cup all-purpose flour
    3 tablespoons packed brown sugar
    4 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    2 large eggs
    1 cup orange juice
    1/4 cup 2% milk
    1/4 cup extra-virgin olive oil or canola oil
    3/4 cup sweetened dried cranberries

    mix dry ingredients, mix wet ingredients in a seperate bowl. Add wet to dry and mix until just combined. Add cranberries at the end. 1/4 cup batter for each pancake on a hot griddle!
    These don’t even need syrup they are so yummy. I use frozen mixed berries instead of the cranberries when I don’t have them. You could also sub nuts or raisins! yum!

  3. Susan, they’re great without the nuts. I think they sound good with them though.

    Michele, I haven’t tried them with anything else yet. They sound like they’d be good with honey maybe, but I haven’t tried it yet.

  4. Oh – I am going to try these – we love pancakes but I feel bad using the baking mixes b/c they are just full of nothing – I have some baking mixes that are healthy but they are just too expensive (not to mention not available here – LOL). Have you tried using anything other than white sugar?

  5. Melody, it just makes my day that the recipe I found is a keeper for you too! I’m so glad! I really think my family would like them better without the nuts. Somebody said something about the crunch the other day! 😉
